Cozy Pumpkin Oatmeal: An Easy 10-Minute Breakfast

  • Author: Sophia Mitchell
  • Total Time: 10 minutes
  • Yield: 2 servings 1x

Description

Pumpkin Oatmeal combines rolled oats, real pumpkin, warm spice, and maple sweetness in one creamy stovetop breakfast. It is ready in 10 minutes and makes two comforting bowls that are easy to finish with milk, yogurt, or crunchy pecans.

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • 1/2 cup pumpkin puree
  • 1 1/2 cups soy milk or milk of choice
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon alcohol-free vanilla flavoring
  • Pinch of salt
  • 1 to 2 tablespoons brown sugar or pure maple syrup
  • Optional toppings: chopped walnuts or pecans, additional sweetener, milk, yogurt, or whipped topping

Instructions

  1. Add the oats, pumpkin puree, milk, pumpkin pie spice, salt, and brown sugar or maple syrup to a medium saucepan. Stir until the pumpkin is evenly dispersed.
  2. Bring the mixture to a gentle simmer over medium heat, then reduce the heat as needed to prevent a hard boil.
  3. Cook for 3 to 4 minutes, stirring frequently and scraping the bottom, until the oats are tender and the mixture is creamy.
  4. Remove from the heat and stir in the alcohol-free vanilla flavoring. Divide between two bowls and add desired toppings.

Notes

  • Use plain pumpkin puree rather than sweetened pumpkin pie filling.
  • Remove the oatmeal while it is slightly looser than desired because it thickens as it stands.
  • Refrigerate cooled leftovers in a covered container for 3 to 4 days or freeze for up to 3 months.
  • Reheat gently with a splash of milk, stirring until creamy.
