- 1 cup milk of choice, such as kefir, almond milk, or regular milk
- 1/3 cup pumpkin puree
- 2 tablespoons chopped pecans
- 1 1/2 tablespoons pure maple syrup
- 2 teaspoons chia seeds or flax meal, or 1 teaspoon each
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon alcohol-free vanilla flavoring
- Pinch of salt
- Optional toppings: whipped topping, chopped pecans, pumpkin pie spice, maple syrup, or cinnamon
Instructions
- Whisk the rolled oats, milk, pumpkin puree, pecans, maple syrup, chia seeds or flax meal, pumpkin pie spice, alcohol-free vanilla flavoring, and salt in a bowl until evenly combined.
- Divide the mixture evenly among three jars or containers with tight-fitting lids.
- Seal and refrigerate for at least 4 hours or overnight so the oats and seeds can hydrate.
- Stir each serving well and add optional toppings just before eating.
Notes
- Use old-fashioned rolled oats; quick oats become soggy and steel-cut oats do not soften properly.
- Keep toppings separate until serving for the best texture.
- Refrigerate the sealed oats for up to 5 days.
- If adding protein powder, stir in extra milk as needed to maintain a creamy consistency.
- For a nut-free version, omit pecans and use a nut-free milk.
